Ok...most of this might pertain mostly to cs on pc, but I still do have 7 so I'm going to compare a.s.p.
Pressing any of these keys will bring you to the corresponding mode your mouse will be using. Pressing shift, alt and ctrl keys with it give you new options.
I think that most of them are similar though so here goes! in order of importance:
B: brush or pen tool
G:paintfill tool or gradient
V: move tool
W:magic wand
Z: zoom tool (hold alt zooms out)
O:dodge/burn
L:lasso tool
M:marquee select
E:erase
U:custom shapes
A:arrow tools
P: pen tools
R: smudge, blur, sharpen
S:stamp, pattern stamp
T:type
I:eyedropper (use alt-click instead, faster!)
H: hand tool (hold spacebar down instead)
C:crop
K:slice
J:healing spot,redeyetools
X: switch background/foreground
F: full size (press again it goes back to normal, I hate accidently pressing it!)
D: default colors (B&W)
N: notes tool
Holding shift+ any tool: toggle through tool selection
Holding ctrl+ keys:
Ctrl click=select custom shape (black arrow)
S=save
T=transform
A=select all
Q=quit
O=open
Y= covert to cmyk
z= undo
w=close window
X=cut
V=paste
R=rulers
E=merge down
f=repeat filter
h: hide (love this, hides the spinning marquee so it isn't bugging you while you're shading!)
Right-click=select layer (convenient! just hold it over the layer, it will give you a list if there's multiple in one spot!)
Holding shift + rightclick:
While using pencil/brush or bucket: paintmode
while dodge/burn: mode (shadow, hi. and midtone)
With custom shapes: more options, free transform
Just holding shift :
While using custom shape tool: add to area
Selection tools: add to area
Holding alt:
with custom shape: subtract from area
with selection: sub from area
Held while using dodge or burn: Exact opposite of the same mode (burn highlight turns to dodge highlight, etc.)
that's not all, if more comes to me I'll put it here. This saves a ton of time without having to move the mouse back and forth hunting for tools when you can select stuff with one hand and use the mouse with the other, pretty much uninterrupted ^_^
